I am always looking for an easy breakfast in the m I am always looking for an easy breakfast in the morning. I had this at a hotel my husband and I stayed at this past year, and I knew I had to figure out how to make it at home. It's super easy and high in protein! 

CHIA SEED PUDDING

*1 cup plain greek yogurt
*1 cup milk (alternative milk is ok)
*1 Tbls sweetener - honey, sugar, stevia, etc.
*1/3 cup chia seeds

Mix all together in container, cover and place in refrigerator overnight. The next morning scoop some out and add fruit and if you want, more sweetener of your choice.

Makes 2-3 servings.

So easy to put together on these chilly fall nights. There's protein, veggies and just the right amount of cream.

4 Tbsp butter
1 cup chopped celery
1 Tbsp minced garlic
1 cup shredded carrots
1/2 tsp salt
1/2 tsp pepper
2 tsp onion powder
1 Tbsp Italian seasoning
1/2 cup flour
3 cups chicken broth
3 cups milk
1 1/2 cups heavy whipping cream
2 cups cooked shredded chicken breast
8 ounce frozen spinach
16 ounce gnocchi

🍂In a large pot, over medium heat melt butter. Once melted add in celery and cook 5-10 minutes until soft. The last 2 minutes add garlic.
🍂Add carrots & all seasonings. Add flour, stir & cook 2 minutes until all combined.
🍂Stir in chicken broth, milk and heavy cream.
🍂Add in frozen spinach & cooked chicken.
🍂Turn heat up and bring to a boil. Carefully add gnocchi to soup and boil for 5 minutes.

Serve with fresh buttered bread & salad.
